It is made from plums picked from the tree, pureed in barrels with the seeds and fermented. 2 g Lallzyme HC pectinolytic enzyme, 1 kg sugar, 20 g Uvaferm 228 aroma-releasing, cold-tolerant yeast have been added per 100 kg. Stored at constant temperature. The mash treatment is traditional, stirring once a day. Barreling 09.10.2024, expected maturity about 3-4 weeks. The mash is transferred without seeds.
