Description
Vinasse is a brownish substance with a characteristic odour and a weak acidic chemistry, the components of which are:
- dry matter content: 40 % by weight
- crude protein content: 25-30 % by weight
- inorganic matter: approximately 50 % by weight
- organic matter: approximately 50 % by weight

The pH of the vinasse varies in the range 5.9-5.4. Its N content is about 4.0 m%. The high N content allows it to provide a favourable source of nitrogen for the plant. Among its nitrogen-containing compounds, amino acids are present in significant quantities. The majority of these amino acids contain metals in complex form and are therefore useful as excellent plant nutrients; aspartic acid and glutamic acid are found in high amounts.
